5 Healthy Recipes to Try Out This Summer

This year, I (along with 54% of the U.S. population) put forth a New Year’s resolution pledging to eat healthier. And, like the majority of those who did, I also completely forgot about my resolution after about a month. To be fair, school (and my kitchen-less Potomac dorm) make it pretty difficult to cook healthy meals on a daily basis. 

However, with the school year coming to a close and my imminent return home to a real kitchen inching closer, I’ve decided to make a change. In honor of this decision, I’ve compiled a list of my go-to healthy recipes to encourage myself and any other GW student dealing with broken New Year’s resolutions to pick themselves back up and try again – even if we are nearly halfway through 2022.  

Cilantro Lime Shrimp Bowl

This refreshing and low-effort dish is sure to keep you full and happy for hours on end and it’s super customizable to fit whatever health needs, cravings, or dietary restrictions you may have.

Pesto Pasta Casserole

This homemade creamy pesto dish is sure to keep you satisfied and incorporate greens into your diet. While this recipe takes a bit more prep, it also provides large portions and stores extremely well, making it perfect for avid meal-preppers.

One-Pot Mexican Quinoa

This dish is low-prep and perfect for those looking to cook a delicious meal with minimal cleanup. It’s also extremely easy to customize, making it perfect for any picky eaters out there!

Orange Glazed Salmon

This salmon dish (which can easily be substituted for tofu using this recipe) is sure to put a smile on your face with its tangy flavor that makes everything, even vegetables, taste incredible.

Loaded Sweet Potato

Finally, this loaded sweet potato recipe is full of essential nutrients, easy to make, and will keep you full and feeling healthy all day long!

I believe that in order to keep up with whatever health-inspired resolutions you may have, it all starts with a few staple meals that motivate you to continue eating clean and nourishing your body. If you can get excited about testing out a new delicious and healthy recipe, then meeting your goals will seem more enjoyable and less like a chore. And remember, a healthy diet is a diverse one (and that includes sweets), so don’t forget to treat yourself to a sweet treat too!
