From the early years of helping my dad make homemade pizza, to teaching cooking classes as a camp counselor last summer, spending time in the kitchen has always been a passion of mine. Living at college made creating the complex meals that I love difficult, given my combined kitchen space, time, and budget constraints. Even when I did utilize my kitchen, I found myself resorting to cooking the same simple things over and over again.
One silver lining of my life in quarantine has been a renewed passion and ability to cook again. Not only do I have a fully stocked spice cabinet and pantry at my disposal (limited grocery store supply allowing), but taking the time to cook a nourishing and creative family dinner adds structure to my day and gives me something to look forward to every evening. Spending time in the kitchen gives me something to do and genuinely keeps me sane. Below are some of my favorite meals that I’ve made since being at home. Hopefully you can take some inspiration for your next quarantine dinner!
Harissa and Goat Cheese Cauliflower Steaks
Cauliflower steak is something I never would have made while cooking for myself in college. It’s time intensive, doesn’t hold up well as a leftover, and requires some niche ingredients that I simply didn’t have or want to buy (when would I ever use a huge bag of pine nuts again!?) However, when cooking for my family of three, this meal was a fun activity that my mom and I got to work on together, with mostly ingredients we already had. The dish involves cauliflower sliced into thick “steaks,” which were rubbed with olive oil, harissa paste, goat cheese, and parsley, and then topped with breadcrumbs and pine nuts to give it a crisp exterior. If you don’t have or don’t like the harissa paste, pesto would be a wonderful substitute. We served them alongside roasted red onion, couscous, and yogurt sauce.

Miso-Roasted Eggplant and Tofu
I think this was the most visually stunning dish I’ve prepared while in quarantine, and it was actually surprisingly fast and easy. The dish all comes together on one sheet tray—and involves eggplant halves and tofu cubes rubbed with a marinade made of miso paste, sesame oil, garlic, and ginger. Kale was added on the tray towards the end of cooking, and was all served together with rice and a ginger-lime soy sauce dressing. If you aren’t the biggest eggplant fan, it could be substituted for portobello mushroom caps or a halved sweet potato!

Cauliflower and Halloumi Tacos
These tacos are in no way traditional, but they’re one of the most unexpectedly delicious things I’ve had in awhile. Cauliflower, onions, and mushrooms were sautéed together with salt, pepper, Trader Joe’s chili lime seasoning, and a touch of soy sauce to give it a rich, savory flavor. They were paired with a salty halloumi cheese (aka my literal favorite cheese ever because you can grill and/or fry it) which I prepared on the grill outside, and topped with avocado and cilantro-yogurt sauce. These tacos were better than El Centro. There, I said it.

Fancy Avocado Toast
Avocado toast was something that I made for lunch very frequently at school, but having extra time (and spices) at home inspired me to get more creative with my toast toppings. This combo of zaatar spice, hot honey, and feta cheese on a local bakery’s sourdough bread (support local businesses please!) has been my current favorite.
Sweetgreen Salad Re-creation
This meal was my personal favorite so far. Anyone who has ever spent more than five minutes with me knows that I’m a huge Sweetgreen fan, and so when I saw on Instagram that they had released their new spring menu that I would no longer be able to try I was nothing short of devastated.
That is until I realized I could create my very own Sweetgreen-style salads at home. I prepared all of the components of the new Roasted Carrot and Feta Bowl myself—from the dukkah spiced carrots to the toasted almonds to the tahini dressing—by following the ingredients listed for the salad on their website. The end result was delicious, and helped me fight off my not-being-at-school sadness just a little bit. I definitely plan on recreating more of my favorite salads soon (I’m looking at you, Harvest Bowl).
While we are on the topic of food, here are some ways to support your local restaurants while social distancing!
1. Order takeout. Most restaurants will adapt their menus to become strictly takeout. Lots are also partnering with food delivery apps like Uber Eats and Postmates to reduce or wave the delivery fee for local restaurants in your area. If your wanting to order takeout, restaurants will sometimes even promote curbside pick up and allow you to pay over the phone to avoid touching equipment.
2. Purchase locally sourced ingredients. Like I mentioned earlier, local groceries, bakeries, and some farmers markets remain open for takeout during this time. Visit these places to get specialty produce that will heighten the quality of your meal and keep your local favorites in business.
3. Purchase a gift card. Even if you don’t feel comfortable ordering takeout, who says you can’t plan your post-quarantine meal? Get one for yourself and send some to your friends to keep restaurants running during the pandemic.
